  • 1 cup brown sugar, packed
  • 1/2 cup butter
  • 1 cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • 1/2 cup slivered almonds, toasted and coarsley chopped
  • 1. Preheat oven to 350º F. Coat a 9x5-inch loaf pan with cooking spray.
  • 2. Using a mixer, cream the brown sugar and butter until fluffy.
  • 3. With mixer running, gradually add the applesauce.
  • 4. Sift together the flour, baking soda, cinnamon, cloves, and salt.
  • 5. With mixer on low speed, gradually add flour mixture to the butter mixture. Mix until well blended.
  • 6. Stir in the raisins and the almonds.
  • 7. Spread the batter into the prepared pan. Bake for 35 minutes or until a toothpick inserted in the center comes out clean.
  • 8. Remove from oven and cool on rack. Run a knife around the edge of the pan and turn out the bread. Cool completely. Slice into 1/2-inch-thick slices.
