Applesauce Bread

- 1 cup brown sugar, packed
- 1/2 cup butter
- 1 cup unsweetened applesauce
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup raisins
- 1/2 cup slivered almonds, toasted and coarsley chopped
- 1. Preheat oven to 350º F. Coat a 9x5-inch loaf pan with cooking spray.
- 2. Using a mixer, cream the brown sugar and butter until fluffy.
- 3. With mixer running, gradually add the applesauce.
- 4. Sift together the flour, baking soda, cinnamon, cloves, and salt.
- 5. With mixer on low speed, gradually add flour mixture to the butter mixture. Mix until well blended.
- 6. Stir in the raisins and the almonds.
- 7. Spread the batter into the prepared pan. Bake for 35 minutes or until a toothpick inserted in the center comes out clean.
- 8. Remove from oven and cool on rack. Run a knife around the edge of the pan and turn out the bread. Cool completely. Slice into 1/2-inch-thick slices.
