New Potatoes With Rosemary

Adapted from Healthy Cooking for Two
(Serves 2)
- 1/2 pound diced red potatoes, with skin
- 2 tablespoons olive oil
- 2 sprigs fresh rosemary
- Salt and pepper to taste
- 1. Spread potatoes on roasting pan. Add olive oil and rosemary, then season with salt and pepper.
- 2. Cover pan with foil and bake for 30 to 45 minutes in a 400°F oven. Then remove foil and broil for about 5 minutes or until the tops of the potatoes start to brown.
