Watermelon, Cantaloupe, and Sweet Pepper Salsa


This chunky, fresh-tasting salsa is the perfect accompaniment to grilled meats, seafood, or poultry—or serve it as is with a bowl of tortilla chips. Adapted from Gourmet Every Day.

(Makes about 4 cups)

  • One 1-pound piece, watermelon, rind and seeds removed, and cut into 1/4-inch dice
  • One 1-pound piece, cantaloupe, rind and seeds removed, and cut into 1/4-inch dice
  • 1/2 red bell pepper, cut into 1/4-inch dice
  • 1/2 small sweet onion, such as Vidalia, finely chopped
  • 1/3 cup, cilantro, finely chopped
  • 1/2 jalapeño pepper, with seeds, finely chopped (wear rubber gloves to do this)
  • 1 tablespoon, chopped fresh mint
  • 1 tablespoon, lemon juice
  • Salt, to taste

 

  • In a medium bowl, combine all the ingredients except the salt. Season with the salt.
