Winter Apple, Cherry, and Blueberry Fruit Crisp with Walnuts


(Serves 4)

  • 2/4 cup cherries, fresh or frozen, pitted
  • 1/2 cup blueberries
  • 1 apple, peeled and cut into 1/4-inch slices
  • 1 tablespoon sugar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon lemon zest
For the TOPPING:
  • 1/2 cup rolled oats
  • 2-3 tablespoons light brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup all purpose flour
  • 1/4 cup chopped walnuts, toasted
  • 1/4 cup cold unsalted butter, cut into small cubes
  • 1. Combine the fruit, sugar, and lemon juice in a bowl and refrigerate for 4 hours. This will allow all the flavors to meld.
  • 2. In another mixing bowl combine all of the topping ingredients, except the butter. Add the cold butter and mix well until the mixture resembles coarse meal.
  • 3. Preheat oven to 375°F. Lightly butter a small baking dish.
  • 4. Spread the fruits evenly in the dish (in about a half-inch layer). Sprinkle the coarse rolled oats mixture evenly on top of the fruit. Bake for 30-35 minutes until bubbly and golden brown.
